That option is right there in Preferences / Options ... "Assign Default Extensions". Whatever you assign from then is the default extension when creating new tracks etc.

LUNA can assign default LUNA Extensions that you own are that are currently being demoed. For example, LUNA can assign the Oxide Tape plug-in to all tracks, or Neve Summing to all buses and the Main track. When these Extansions are assigned by default, you can change which Extensions are assigned (on a per-session basis) simply by making changes to the Extensions in the New Tracks dialog or the Create Bus dialog.
TO ENABLE OR DISABLE DEFAULT EXTENSIONS:
- Open the LUNA Sidebar by clicking the UA diamond logo on the left of the screen, and clicking Settings, or choose LUNA > Preferences from the app menu.
- Click Options.
- Under Miscellaneous, turn Assign Default Extensions on or off.

Agree. Have you found that it’s session specific? I find that if I open a session that was last saved before I changed the settings, new tracks revert to API and tape emu.I had the same issue, and I could not find how to disable it either until somebody pointed me in the right direction.
