You simply select 2 mono sources in Logic. Suppose you link input 1 and 2 in the console, then create 2 mono tracks in Logic and select input 1 in the first and input 2 in the second.

Yes. Will that do something wrong with recording tracks? I ask cuz IF you link channnels then plugins arę stereo right?

For my understanding it should be dual mono instead of stereo.
However, I have not yet tried it myself with 2 microphones in linked inputs.
Why not simply trying and sharing your findings? It’s a one minute thing….

I doubt that cvox and AT will produce a usable result at all if you use two different sources and I would never do it that way.
But just try it out.

As suggested, try recording and see what results you get. It’s the best way to see if you like the results.

If you combine 2 tracks in Console it becomes a stereo track with stereo processing.

Trying to run a single stereo instance of Manley on a stereo track that is really 2 mono tracks can mess up your gain staging and provide...interesting results on the compressor (unless you unlink the channels) and even then, like the initial gain staging, both sources better be "perfectly in sync" or you're gonna have compression you don't like on one of the channels.
